From our classic pan dulce to our creative seasonal treats, we’re known for pushing the boundaries of flavor and design — while staying true to our heritage.
Our beautifully made cakes are perfect for all of life’s celebrations — birthdays, weddings, quinceañeras, graduations, and everything in between. We also host hands-on cake decorating classes, and our signature event, Editas Greatest Bake Off, brings together customers, content creators, and community members in a fun, friendly competition that celebrates local talent.

About The Owners
Founded by the powerhouse duo Edith and Jorge Lopez, the bakery began as a small dream and has grown into a beloved household name.

Together, Edith and Jorge have nurtured a business rooted in hard work, creativity, and community. Edith was honored with Business of the Year (2019) by the Hispanic Chamber of Commerce, and her unstoppable dedication continues to inspire. Jorge, the heart behind the ovens, brings unmatched passion to his baking, leading a team that now includes over 24 employees, both full and part-time.

Their daughters have joined the legacy — both graduating with business degrees from UVU — and together, they’ve built a dream team focused on growth, creativity, and excellence. In 2022, daughter Alma Lopez was recognized as Business Woman of the Year by Riverton City, further proving the strength of this family-run enterprise.​
Today, Cakes by Edith is more than just a bakery — it’s a cultural bridge where Mexican and American traditions blend beautifully, creating innovative pastries, offering cake decorating classes, and even launching Editas Greatest Bake Off, a community-driven competition that celebrates the artistry of baking.
